I cannot figure out whose name in the book Dr. Jekyll and Mr. Hyde is symbolic.?

I don't think so. A lot of authors consider symbolic names a cop-out, a break in realism to say something you could have said with the actual narrative. All I can thnk of is the the choice of the name Hyde might signify that it's the side of the doctor's personality that he normally conceals.
