Information on raising meat sheep?

hi, i am considering raising 3-4 ewes and breeding them every year for lambs which would live _months allowed to run around in a spacey paddock, be socialized, be happy and raised organically, and then shown in 4h before going to meat. i do know about the general care of farm animals as i take care of and learn about them. i just would like to know the pricing, good meat sheep breeds, health care, how long to wit beefore slauter, how to creep feed, shelter, ect... thanks
